Super Easy Ramen for Work

One of my favorite "meals" has always been Ramen noodles. It's different from Cup O'Noodles. Plus, haven't you ever eaten an instant soup and still been hungry afterward? In fact any frozen or "instant" meal I took to work were never quite fulfilling, unless it was leftovers of a home-cooked meal.

With my recent mason jar for meal planning infatuation, I decided to give ramen noodles a try. I have to tell you... it's changed my life! Not only are they super easy to make and put together, but they're filling, and I'm getting a lot more out of my meal than I would from eating out or heating up a frozen TV dinner.


Ingredients + Supplies:

  • Mason Jars (32 oz.)
  • Ramen package
  • Baby spinach
  • Corn
  • Shredded chicken
  • Soy sauce
  • Hot sauce, like Sriracha


  1. Add the corn and spinach to the mason jar, followed by the packet of Ramen noodles & seasoning.
  2. Then add the chicken.
  3. Add approximately 14-16 oz of hot water to the jar.
  4. Top off with soy sauce and hot sauce. I personally use the sauce packets from Waba Grill and their hot sauce (or Sriracha).
  5. Cover the mason jar and let it sit for about 10 minutes.

Tips + Ideas:

  • You can add carrots and other veggies that you like in soup. If there's a particular vegetable that you like crunchier, then you can add it to the mason jar uncooked. It will be cooked very lightly with the hot water. If you like your veggies softer, you can put cooked vegetables in the jar and store it until you're ready to cook.
  • You can add all your veggies on the same day and store them. I do that, but I don't include the ramen noodles until the morning I know I will eat them at work. That way, I'm not putting the noodles in the refrigerator. 
  • I shake my mason jar to get the flavors all in the jar. 
  • The longer you wait, the fatter your noodles will be. If the water is not hot enough, the noodles will taste more like Cup O'Noodles. Some people like it like that. I like them actually cooked and soft, so I will let it absorb as much water as possible.
  • You can add cooked beef or shrimp instead of chicken, but make sure it is thoroughly cooked. The hot water will not cook the meat.

I love eating this because it's so filling, inexpensive ($10 will pay for a week's worth of lunches), and I get my veggies. I'm able to lug it to work without having to stick it in the microwave to cook different parts of my lunch. I can eat it at my desk, in my car, or on the picnic tables outside. And clean up is so easy too. It can't be beat!

So here's the thing... I've always wanted to be "that mom" or "that wife" -- heck, "that person" -- who was organized and disciplined enough to meal prep and stick to it. My main priorities have been simplicity and taste. Healthy and convenience were pluses too, but if it was too complicated or ended up tasting gross, it was pointless, and I would never stick to it. That's until I made this breakfast yogurt.

My motivation was in high gear, so I finally took the plunge and bought mason jars. I got my 16oz mason jars from Target. They're awesome. They weren't quite as large as I expected since I was hoping to make salads & ramen noodles, so I decided to make the yogurt breakfast.

It's super easy and so yummy if you like strawberries, but that can be substituted without a problem.



  • about a cup of yogurt (or 5-6 tablespoon scoops) of fat-free Greek yogurt, or plain nonfat yogurt
  • honey
  • 1/2-3/4 cup of strawberries, or fruit of choice
  • 1-2 tbs of almond slivers, or granola


  1. Scoop in yogurt to bottom of the mason jar.
  2. Add a drizzle of honey for sweetness.*
  3. Top with your strawberries.

Optional:  You can add your almonds when prepping, so you don't forget. It adds some crunch to your yogurt, AND protein. My husband prefers to add his almonds when he's ready to eat it because he thinks it's not as crunchy when refrigerated.


Substitutions: You can substitute the almonds for granola. You can obviously substitute the strawberries with the fruit of your choice, although I must say that the typical yogurt flavors -- peach, strawberry, raspberry, blueberry -- are ideal. You can switch fat-free Greek yogurt with nonfat plain yogurt, if you don't care for Greek yogurt. I used to think Greek yogurt was really tart, but once I added honey & enough strawberries, you can't even taste the tartness. You could also try honey flavored Greek yogurt. That way, you won't have to worry about adding enough honey. The natural probiotics in Greek yogurt are awesome! At the end of the day, it ends up tasting like fresca con crema, and I can eat that all day long.

Tips: My husband diced the strawberries. It took him about 15 minutes. We got a 2-lb. basket of strawberries from Target. That was more than enough for 10 jars, so it's perfect for a week's worth for the both of us. One large (32 oz) container of yogurt can make 4 mason jars.

Why You Should Get Your Child Diagnosed Even If You’re Scared

It's funny because I wrote this post last June. I can't believe it's been in my drafts folder for almost an entire year. I suppose there was a part of me that was hesitant because I feared that my choice to share this was a bit short-sighted in that I never got permission from my child to share it.

I've been battling with myself. I see value in sharing it because I would have appreciated reading a mother's perspective during these dark times, yet I played out a number of "what if" moments in my mind... What if they got it wrong? What if I make it worse for someone? What if he hates me later on because some cruel classmate stumbles upon my post 10 years from now and reads it and teases my kid? What if people judge him? What if people judge me for oversharing? What if my family thinks I'm stupid for putting it all out there on the internet for EVERYONE to read and judge? <<< I told you there are a lot of "what if's"...

At the end of the day, I've decided to publish the post because it was really what I was feeling, and we are at such a good place these days that I want people to know that there are still good days. In fact, there are more good days than sucky, awful ones at the moment. Isn't that inspiring? Anyway, here it is... enjoy!

I'm a parent of three awesome kids, two boys + one girl. They're each so different. They have their own personalities, their own strengths, their own weaknesses, what makes them happy/excited/laugh, what makes them sad/scared/cry. 

One thing that is constant for all of them is how much I love being their mom. So when one skips crawling and wants to start walking, we celebrate. When one gets potty trained before turning two, we celebrate. When one jumps off the diving board with no fear, we celebrate. 

But what happens when doctors say your baby breathes more than he has to? What happens when he doesn't start walking until after he's one? What happens when he's not talking when he's supposed to? <--- They're all pretty scary stuff that make you worry. And honestly, parenthood wouldn't be as fun or crazy if all children were the same.

The Autism Spectrum is a scary thought. In fact, it was my greatest fear when I had my first son. (I don't know why. I didn't fear cancer or something terminal, but I was deathly afraid of this). I've read so many articles and blog posts from people who document their lives with someone on the spectrum. It doesn't matter what you read, or whether the author's situation is mild or severe, because at the beginning, you're certain that your situation is the worst case scenario.

I can only speak for myself, so for me, the scariest part was uncertainty of progress. My brain would go as far into the future as I could and think of everything wonderful my child wouldn't be able to do, all the things we would miss out on. It wasn't until a friend from high school, whom I had run into for the first time in 17 years, said something to me. When you're in the situation and waiting to see progress,  or even a diagnosis, you can't help but wonder, "Why my kid? Why is this happening? Why can't everything just be normal?" She told me she did the same thing, and her husband said, "F--- it! This is OUR normal." 

He was right, because what is normal anyway? One of my kids loves apples over cookies. That's our normal. One of my kids, I swear, said "hi" at four months old. That's our normal. One of my kids goes to speech therapy, and that's our normal. One of my kids made me have a meltdown at Wal-Mart because I was that crazy mom who couldn't control her kid in the store, and that's our normal. I love them all the same. 

Here is my advice, and the advice I have heard so many times: 

  • FOLLOW YOUR GUT because she knows her stuff. Seriously.
  • Also, despite my kids' pediatrician's advice NOT to research on the internet, I say DO IT. READ AS MUCH AS YOU CAN now, so that you know all of the options, possibilities, and resources available, with the knowledge that the spectrum is vast + wide but getting a medical diagnosis is only way to truly get peace of mind. (I swear!) I only advise you to read as much as you can with the caveat to avoid spiraling down that abyss of negativity. It's important to know what's out there, but remember that at the beginning it feels like you have hit rock bottom and that the world is crashing down around you. 
  • FIND YOUR TRIBE + BUILD IT. For me, it's easier to talk about it, even though I cry, because there's always someone who knows someone who can help or give advice. You need those people in your life to remind you that you're doing the right thing. If it weren't for my friends, none of which have children on the spectrum themselves, but have taught or coached someone on the spectrum, I would have waited. In the process of waiting, I would have done more harm to my child by remaining hesitant. (BTW, you can always email me or give me a call. I will tell you everything I know).
  • REMEMBER THAT YOU ARE YOUR CHILD'S ADVOCATE. No one will advocate for your child better than you will. All the internet research, conversations with other parents, and degrees don't make you an expert in ASD. Sometimes I think that even the "experts" don't even know because each child on the spectrum is different. However, you are an expert in your child, so don't let anyone tell you they know him/her better than you do.
  • KEEP AN OPEN MIND. Your situation is not preventable. You didn't do anything to cause it. You do, however, have the ability to help your child, so keeping an open mind will allow you to take action for your child's best interest. There's no judgment, I promise.
  • EMBRACE IT AS YOUR NORMAL. I tell my husband all the time that my children chose me to be their mom for a reason. And if God blessed me with one who is not like everybody else, it's because that kid knew what a fighter I was, and I am my child's best opportunity for a great life. My child knew I would be the conduit to making sure my child does what God intended -- and that's to make a huge splash in this world. I just know it.

The way every child is different, every day is different, but that's parenthood. There are days that I cry my eyes out, and there are days that I say "It was a good day." There are days when I want to fire my entire family and escape the madness, but it does get easier. It gets better, I promise! 

So there it is. That's our story. I have to admit, it's time-consuming and stressful at times, but the progress we have seen in just a year is amazing. I'm so lucky because it could be a lot worse. We are very lucky that progress is visible in his behavior and communication. We are so lucky that he's responding well to therapy. We are so lucky to have such a wonderful support system and amazing therapists, case workers and teachers. Thank you for being on the journey with us.

I guess the whole point in my sharing this, and I suppose my "mission" on this "autism journey" is to spread the word that it is okay to be scared, but you cannot let the fear deter you from your path of helping your child and being his/her advocate. Fear is not an option.

Off the Shoulder Inspiration

The idea of working from home is so thrilling sometimes, but it's not for everyone. I fortunately have the luxury of working from home one day a week, which is my choice because I would much rather go into an office than work from home. I feel more productive in an environment outside where I live. Plus, I don't feel the pressure of doing everything while I'm trying to work (take care of the kids, entertain the toddler by watching cartoons, cooking dinner, doing the laundry, cleaning up spills, changing diapers, and did I mention do my actual job that pays me an actual check?).

Don't get me wrong, I love my Thursdays when I work from home because I get up, drop #1 off at school and take #2 to speech therapy with #3  in tow, (try to) take calls, return emails, and then get home and work. It's awesome because I wear yoga pants and a top knot (although I confess I have a top knot almost every day, even at my job). But they say to be the most productive, you need to be dressed for the job you want -- whether you're at the office or at home. It's true. So maybe I secretly would love to work from home so I could wear one of these tops without feeling guilty because I wouldn't consider it 100% workplace appropriate (depending on where you work).

Exposed shoulders are so carefree. Maybe a nice blazer could hide it and make it work appropriate? Summer is coming and I think it would make it an easier transition from office to beach. Am I right?

Jomygoodness Rebranding

In my last post, I shared the reasons behind the rebirth of Jomygoodness. With my current fascination with self-help books, I realized that I have always shared inspiration for different things -- weddings, living room decor, nurseries -- but never for my brand. <--BIG MISTAKE!!

How could that be? How could I skip such a crucial step? Because it IS crucial to do this, to avoid changing my branding and style every other month. So I put together a little inspiration board that I think best reflects my style, personality, design aesthetic... which I hope to use in branding Jomygoodness. 


How do you like it? Here is some explanation of my selections and my style. I consider my style: feminine (hence, the blush/pink color and flowers), classic + timeless (lots of black & white, clean lines, formal calligraphy with plenty of flourishes), and a bit carefree + fun (shades of seafoam/aloha blue, top knots and informal brush calligraphy). If "modern traditional" was a style, that would be how I would describe it.

I love typography & fonts! I really do. So, selecting the fonts that "best" represent my style + brand was a bit of a challenge. I limited it to Saveur Sans as my sans serif font because I love how modern and clean it is; Bellevue was my pick to add some sophistication and formality to the whole thing; my own handwriting (even though it's not technically a font) because it makes it more personal and adds the informality (again, top knots!) to my brand.
